
Ooh. Monday! Thank God It’s Monday! Don’t you love Monday? Ready for our recipe inspirations for this week? Here we go. (None of the photos are mine – they all link back to where the recipe is from so please visit these wonderful sites if you want to check out these delicious recipes!)
I think we might be eating a lot of beef this week…starting with Meatloaf with Kale (I really love Kale so why not?).

I’m not so sure about the combo here but I’ll give this Beef Potato and Quinoa Soap (minus the beef bouillion) a try.

And OMG this Crispy Yogurt Chicken from the Pioneer Woman looks scrumptious.

Of course I’ll have to make something familiar like this Chicken Sausage and Bean Stew
My big scary attempt this week will be this Beef Bone Broth (I’ve only tried once – I usually do chicken broth but I really want to make some….

Crockpot Pho! (Let’s see if I can muster up the courage to try this bad boy!)
For snacks, I will attempt this Honey Cinnamon Chickpea minus the canola oil (coconut oil instead) and chuck the sugar out.

And for some sweet treats, maybe this Cardamom Coconut Chocolate Chip Cookies. Or a version of this Gluten Free Carrot Bread.
Oh Breakfast! How can I forget? We’ll start with some almond milk to use for this Green Smoothie.…Hmmm…a taste of summer in winter?

And I love hash but can sweet potato has work? I’m going to have to try this Sweet Potato Hash Recipe and see. I’m gonna have to add some kale or something. It’s looking pretty lonely.
My daughter has been into oatmeal lately and I like throwing chia seeds in them. This Creamy Chia Oatmeal recipe adds peanut butter but I think I’ll try almond butter.

Mama’s got to each for lunch too – and this Smoked Salmon Cobb Salad looks yum yum except I’ll probably throw in some hearty greens in.

We don’t eat tuna that much at all but this Swiss Chard Tuna Wrap looks fabulicious!

My daughter is SO into pop-up art these days and I think she’ll like these tutu ones.

And I think we’ll try the science project #8: Homemade Plastic! Say What? We have all the ingredients anyway. So there.

I DO love Mondays! And thanks for the crockpot pho recipe/ We’re huge pho fans around here. I tried making it once but it was a disaster. Hope this one will give me better luck!
